Honestly, being in the kitchen isn’t my favourite place in the world. I know it’s crazy, a health practitioner that doesn’t LOVE being in the kitchen??!? Yup. I’d just rather be watching Keeping Up With The Kardashians. That’s why everything I make has to be fast, healthy with the most nutrition as possible.
So for those who are too busy to cook or don’t want to, here’s my fave healthy breakfast muffin recipe with no flour. NO FLOUR = NO WHEAT. And why is this important?? Well, in Traditional Chinese Medicine (TCM) wheat is considered a damp food and damp equals mucous which pretty much means it slows your entire digestive system down. Not to mention, the inflammatory response and increasing amount of wheat & gluten allergies. Our bodies just aren’t feeling wheat these days.
So check out the recipe below. Prep time is super quick and it’s basically oatmeal to go. No fuss, no muss.
Prep Time: 10 mins
Cook Time: 15 mins
Serving: 6 muffins (double the recipe if you want a full batch)
1 cup of uncooked whole rolled oats
1 cup of organic unsweetened apple sauce
1 egg (free range if you can)
1 tsp of baking powder
1 tsp of vanilla
1/2 tsp cinnamon
1/2 cup blueberries
1/4 cup crushed walnuts (optional)
1 Preheat oven to 425F
2 In large mixing bowl combine oats, apple sauce, egg, baking powder, vanilla
3 Stir it up (little darling, stir it up!)
4 Add cinnamon, blueberries and the optional walnuts*
5 When all ingredients are mixed, place mix into muffin tray
(they don’t rise so feel free to fill to the top)
6 Bake at 425F for 10mins, then 375 for remaining 5-7mins
7 let cool for 10 mins before removing from the tray so they don’t break apart. Nobody likes a broken muffin.
TIP: I like to line my muffin tray with coconut oil which makes for a nice crisp on the outside once these babies are baked as opposed to muffin paper wraps.
*KNOWLEDGE DROP: If you’re not allergic, walnuts are good for your brain because they are shaped like one so go for it! It also adds a nice texture once its baked. Okay, okay, they are also high in DHA, a type of omega-3 fatty acid, which your brain loves. Omega-3 fatty acids support brain function, reduce inflammation and can help with depression and anxiety. (sidenote: did you know your brain is your fattest organ??? It’s about 60% fat! Crazy!).
